Beef Lentil Soup with Vegetables - made with beef mince!

Here’s a different beef mince recipe idea for you – a hearty Beef & Lentil Soup with vegetables! Adapted from my Best Ever Lentil Soup with the addition of ground beef and a Moroccan spicing for extra tastiness, lentil soups can be so boring – but not this one!

Healthy, hearty, economical – and it’s a complete dinner made in one pot. Yessss…..

I've made this multiple times (though with changes to the spices and vegetables based on what I have or want to eat). It's really good! Also, blending a few cups of the soup into a puree and then adding it back to the pot makes it creamier, but alas...my blender has broken 😅. I still will be making this again this week.

Followed this recipe to the letter, and during the process, was concerned when I added the balance of the spices during step 5 with when making the broth, as dry spices normally need to be cooked / fried off.. But trusted the recipe, the end result was an overpowering uncooked spice taste, the soup was inedible. I ended up having to buy in pizzas for dinner!
