Soft and chewy Vegan Red Velvet Cookies topped with luscious cream cheese frosting are the perfect dessert!

Ingredients:
* 1 tbsp egg replacer, or flaxseed meal or chia seeds
* 2 tbsp plant milk
* 1 ½ cups all-purpose flour, (180g)
* 1 ½ tbsp cocoa powder, unsweetened
* ½ tbsp cornstarch
* 1 tsp baking soda
* ¼ tsp salt
* 10 tbsp vegan butter salted, softened
* 1 cup light brown sugar, packed, (210g)
* 2 tsp vanilla extract
* 1 tsp red food color gel, or 1 tbsp liquid red color
* 1 tsp white vinegar
Cream Cheese Frosting
* 4 tbsp vegan butter, salted, softened
* 4 oz vegan cream cheese, softened, (115g)
* 1 ½ cups powdered sugar, (175g)

Steps:
1️⃣ Preheat the oven to 350F. Prepare the egg replacer by mixing it with the plant milk. Combine the flour, cocoa powder, baking soda, and salt. Set this aside.

2️⃣ Cream the butter and brown sugar together in a large bowl until the mixture looks light and fluffy. Use a mixer or fork for this.

3️⃣ Add the egg replacer, vanilla, red color, and white vinegar to the large bowl. Beat or stir them in until they're fully combined. Check the color to see if you want to add more.

4️⃣ Add the flour mixture to the large bowl. Gently fold the ingredients together until all of the dry bits are incorporated into the cookie dough.

5️⃣ Roll the dough into 1.5 tbsp balls. Place them 2 inches apart. Bake them for 9-11 minutes until the edges look stiff but the centers are still soft and puffy. Try not to over-bake them because they will continue to cook once they're out of the oven.

6️⃣ While the cookies are baking, make the frosting. Mix the butter and cream cheese with a mixer. Then mix in the powdered sugar a little at a time. Place it in the refrigerator to chill while you wait for the cookies to cool down.

7️⃣ Ice the cookies and enjoy!
