Vegan Red Velvet Cookies For Beginners | Easy Baking

Today's recipe is for quick and simple red velvet cookies. Most of the ingredients can be substituted for whatever you have in your cupboards.

Ingredients: (MAKES 12)
180g self-raising flour
115g margarine
150g + 50g caster sugar
2 tbsp soy milk
2 tbsp golden syrup
1 tbsp cocoa powder
1 tsp vanilla extract
1/4 tsp baking powder
Red food colouring as needed*
* be sure to avoid e120 (carmine/cochineal)
Method:
1. Preheat oven to 160°C (fan)
2. Combine the self-raising flour, cocoa powder and baking powder in a large bowl
3. In a smaller bowl, cream the margarine and 150g sugar until light
4. Add the syrup, milk, vanilla and food colouring to the butter-sugar mixture, then mix until bright red
5. Add the wet mixture to the large bowl and stir until combined.
6. Form into 40 g balls and coat in the remaining sugar
7. Place onto a lined baking tray and flatten each ball a little
8. Bake for 10-12 mins until soft and crinkly
9. Remove from oven and cool until firm
10. Enjoy!
