How Caviar Is Made

This process will SHOCK you. I had no idea caviar was farmed and harvested this way. But that's not surprising, especially given the fact that this process doesn't happen just anywhere. I've always wondered why caviar is so expensive, but it now makes sense due to the delicate, careful and hands-on process required. Rather than being a chef in a kitchen, I felt more like a scientist in a lab, fully decked out in protective equipment.

I understand that you shouldn’t use a metal spoon to serve caviar. What confuses me however is that throughout the production process the caviar is almost in constant contact with other metal tools and containers. So I wonder, is it only certain metallic substances that effect the quality of the caviar?
