I have a lot of respect for the man who admitted he has a rat problem and the rat problem was then fixed. Knowing, his establishment was going to be castrated and has the balls to say so. Kudos, now, if only they could keep it clean...

I worked for 45 years in the refrigeration industry and serviced commercial kitchens for a few years; that's when I stopped eating out. Most restaurant kitchens are horrifyingly filthy, with food you wouldn't serve your pigs. Budgets are so tight at restaurants that they will cut corners just to stay in business. The only spotless, immaculate kitchen I ever saw was in a Chinese Restaurant in Bedford, New Hampshire that made their money from the secret gaming rooms they had out back - they could afford to remain spotless so as not to attract attention to their real business.

Here's another true story. I drove taxi on weekends in a "major" Ontario, Canada city while attending college. I received a radio call to pick up a take out order at a Chinese restaurant. (It was a dump.) While waiting at the side kitchen door for the order, I observed 2 kitchen workers using a pail, situated right beside a crate of vegetables, as a urinal. Lots of "splashing" onto the vegetables. When done, they just "gave it a shake, " zipped up and went back to cooking with hand washing. I left without the order and contacted my dispatcher who called the customer. I found out the following week that she was grateful I left without the order. p.s. The next Friday night, I was driving by that eatery and it was closed. The cab company had called the City Health Department. You never know. True story!

There's this restaurant I used to work at called Sushi Kuni. Nobody wore gloves, everyone wiped dirty hands on aprons. I was the only employee who actually washed my hands and wore gloves when preping food. Nobody thanked me
