Kitchen shears are an essential component of any cook’s knife kit. We use them for a wide range of tasks—cutting twine and parchment, snipping herbs, trimming pie dough, cutting florets from heads of cauliflower and broccoli, and butterflying chickens, to name just a few.

ABOUT US: Located in Boston’s Seaport District in the historic Innovation and Design Building, America's Test Kitchen features 15,000 square feet of kitchen space including multiple photography and video studios. It is the home of Cook’s Illustrated magazine and Cook’s Country magazine and is the workday destination for more than 60 test cooks, editors, and cookware specialists. Our mission is to test recipes over and over again until we understand how and why they work and until we arrive at the best version.

Any kitchen shears must come apart as requirement #1. Not sure what brand I have, but didn’t know why I’d not gotten a pair way back when. Love their usefulness over these last few years.

The same SHUN shears are $55 today. Five years doubled in price.

I work for Sam's Club. I use OXO Poultry Shears when I'm putting together Chicken Quarters and Chicken Breasts for our HMS dept. The Shears are great because they have a spring in the handle so there is less tention. The problem with that however is that if you wash the shears enough the glue wears out and the spring falls off. It would be great if they could change the design so that the spring is either molded into the handle or if it were secured into place with a screw. I really like scissors/shears that come apart. Easier to clean.

The best shears outthere are the Succfly shears and I am not sponsored by anyone to promote them. They will cut through everything and they separate (which is a must) for easy cleaning (hand wash); you could actually use them in the garden too! The downside is that they have a good weight to them, the tension is tight and if you have small hands then I do not recommend them but otherwise OK when you get used to them (perfect size for the majority of men outthere though) but otherwise it is scary what these shears can cut through. I still have my very high end Cutco shears but I melted part of one handle because I put them to close to one of my burners and that was a very expensive mistake. the Succfly shears are better to cut through whatever than my Cutco shears. The only drawback if you have a knife block they most likely won't fit because of the size, but I was lucky with my Zwilling knife block for the shears actually fit in the space alloted for the sharpening steel which I never used for I have manual knife sharpeners to sharpen my knives. I bought mine on Amazon and they regularly go up on sale.

Cutco. By far the best shears I've used. Serrated blades that come apart and open wide. Great leverage, very comfortable.

Maybe I am an overachiever but I have six sets of shears just for cooking, all are twenty plus years old and were a gift from a butcher buddy. That cauliflower, two minutes with a paring knife and that same paring knife quickly cleans up the overhanging dough of a pie.

I love your reviews guys, the only thing I don’t like it’s that the winner always rises price afterward. Now this shears cost $63!! Insane only 6 months after the review.

Wouldn't have included any that didn't come apart for cleaning.

I've had good luck with Oxo and use a chicken specific shears that has one loop so I can use my palm to push down. It's nicer on my fingers.

Fiskars multi use. Heavy duty and they come apart to clean. One side is a knife when it's apart. I think I paid $13 at home depot.
Also has bottle opener. Comes with sheath.

Talk about inflation, the Shun Shears were $27, but now they are $54

There seems to be some understandable confusion due to a confusing video.  The Shun DM7300 sheers do separate.

I've got the take apart shears and love them as I can take them apart to use one blade as a box cutter.

Left my JA Henckels at home when I left to study abroad so I picked up the Oxo Good Grips while here. Love that they both come apart and are comfy for my sausage fingers haha

Great review video on what I consider essential kitchen kit. Too bad the Shun's have gotten so expensive but this video is helpful because I'm in the market for new shears--one of their prime duties will be spatchcocking chicken. One of my most appreciated feature on any shears is a bone notch.

I have the same shears as the winning model, but under a different name: Kershaw Taskmaster. In doing a search it seams that Kershaw no longer sells them under their name, and Shun raised the price. The current Kershaw Taskmaster shears are a different design, and ATK rates them below the Shun and J.A. Henckels shears.

I have the Wüstof shears and I just realized I have the same slipping problem. Time for a change I guess.
