This video will show you how to make a quick and simple compound butter (mixture of butter and flavoring ingredients) that can be used to flavor pan drippings.

This recipe is a variation of the one featured in this video:
Roasted Garlic and Onion Compound Butter
Ingredients
1 stick unsalted butter, room temperature
8-10 cloves roasted garlic plus oil
2 scallions, sliced thin
1 lemon, zest only
1/2 tsp salt
1/4 tsp cracked black pepper, to taste
Preparation
Place all ingredients in medium size bowl and mix thoroughly.
Keep in airtight container and use as a spread, toss with vegetables and cook at your preference, or use to cook your favorite protein.
For later use: Place into small silicone ice cube tray and freeze. Remove and place into ziplock bag and keep in freezer until ready to use. Or roll tightly in parchment, wax paper, or cling wrap & freeze. Remove from wrapper, cut into coins, and transfer to ziplock bag; keep in freezer until needed.
Tips
Try some of these flavor combinations:
Lime zest, cilantro, & cumin
Sundried tomato, feta & black olives
Bacon bits, blue cheese, & your favorite hot sauce
