Why 0W20 oil is better in some engines.

Using the right type of oil is critical, especially in new generation of engines, everyone must stick to the viscosity recommended by engine manual. For example if 0W20 is recommended you have choice of 0W20 for everyday use ; or 0W20 for racing. Each engine is designed for a given viscosity of oil. Failing to do this can lead to loss of power and wear. Check your manual to know the right viscosity.

thin oil flows better but protects the engine less.
by this logic would be better to use just air...

Water does not work in high hp engines. Been proven in racing. Only used to save $ on e p a mpg estimates. Scores bearings and cylinder wall

Not really a good example. The oil is in room temperature. It would be more informative to see 2 sets of these things at different temps. One at -30 degree celsius and one at engine operating temp of 100 degree celsius. I think that setup would be more informative.

what am i missing ? 0W-20 is NOT in the video, youre showing 0W-30. Also the viscosity changes when under full load and 0W-20 becomes too thin actually damaging your engine. Unless you drive a hybrid where the engine needs to kick in in a cold state and therefore needs thin oil to be lubricated properly asap, or unless you only do city driving and never push your car, 0W-20 has no business being in a regular gas or diesel car.

Agreed, the 0W is for easy cold start the W30 is how thin the oil is at operating temp. Those numbers are only one part of what makes a good oil choice since not all 0W30 are equal. And especially, one type of oil for one engine, RTFM !

Always alway use 0w, and the other number what the manufacturer says.
