Fried red snapper fish is a delicious accompaniment for kenkey or banku with chili sauce. It may also pair well with a variety of dishes such as rice and gravy, fried yam or baked yuca! And even steamed quinoa! Please enjoy my fried rendition of this beautiful fish!

Ingredients:

* 2 medium red snapper fish scaled, guttered, fins removed and thoroughly cleansed
* 1 shallot onion
* 1 sprig of scallion chopped
* Small piece of ginger
* 3 red baby Serrano chili’s
* 2 garlic cloves
* A pinch of smoked paprika
* A pinch of dry ground thyme
* A pinch of crushed black pepper
* Salt to season
* 1 tablespoon of corn starch

Blend all spices and seasonings together till smooth and massage into fish with incisions for thorough permeation of marinade. Then marinade for 30 minutes. Sprinkle corn starch onto marinated fish and deep fry in preferred oil till golden brown and crispy.

Will thus work without frying? I just want to put it into the oven. I don't fry for health reasons and don't use salt either.

Hello. I'm curious to know the recipe for the fourth 'black' sauce shown on the right at the beginning of this video. Thanks in advance.
Edit: I've just done some research and I assume its 'shito' from some black chili pepper like the Chilaca/Pasilla, black Hungarian, black pearl, or black cobra pepper. What kind of peppers would you use?
