Hey Quang, welcome to Bangkok and thank you so much for coming to Phed Mark! The yolks are so orange because they are duck eggs. For the basil, it's a combination of mostly kaprao which is "holy basil, " and clove basil or tree basil, which is that slight mintiness.

That looked like perilla leaf but according to Hot Thai Kitchen, in Thailand they make pad kra pow with holy basil which is closer to Italian basil in flavor. I don’t know, I’m not Thai but have followed Mark and Pai for years. I’ve made this several times following her recipe and it’s so delicious ❤ thank you and so glad to see you and Linh are traveling!
