Biscuits and Gravy saved the U.S. during the Great Depression. It was really common to make a gravy with whatever protein you had available and put it over whatever carb you had on hand. My grandma in the PNW made tuna or salmon gravy over toast. The Southern version of biscuits and gravy spread like wildfire around the country because it was the tastiest version of the Great Depression struggle meals. Now it’s a staple meal in every part of America and no longer considered a struggle meal but rather a home cooked delicacy.

Speaking as a Southern woman born and raised, let me say two things. First, I want to tell you that it does my heart good to watch you gentlemen enjoying biscuits and gravy! The other thing I would like to share with you is that there is no chili powder in the gravy. The bit of heat you're feeling is from ground black pepper. Biscuits and gravy are only seasoned with salt and pepper, just very simple. No other herbs or spices are put into it, because the ground sausage gives this dish its flavor. The sausage is seasoned when it is made.

You have to cut the biscuits in half horizontally to get the proper biscuit to gravy proportion right. That way it soaks into the open surface and makes everything perfect.

And the most common icing on cinnamon rolls is basically half cream cheese and half sugar. It's magical.
