Peach Tiramisu: super creamy! 🍑

INGREDIENTS
3 eggs (separated yolks and whites)
510g mascarpone
90g sugar
320g peaches, chopped
250g ladyfingers
300ml milk
 
Peach slices to taste
Crumpled amaretti biscuits to taste
 
METHOD
1. Separate the yolks from the whites.
2. Beat the egg whites until stiff with an electric whisk in a large bowl.
3. Pour the egg yolks and sugar into a large bowl, and beat the ingredients with an electric whisk until the mixture is high, whitish, and frothy.
4. Add the mascarpone 2 times, incorporating it into the mixture each time, mixing with an electric whisk.
5. Add the beaten egg whites to the mixture, in several times and mix from the bottom up with a spatula.
6. Add the peaches in pieces, and add them to the mixture always stirring with a spatula.
7. Distribute a spoonful of cream on the base of a glass baking dish (30x20cm).
8. Pour the milk into a large container suitable for soaking the ladyfingers.
9. Make a layer of ladyfingers soaked in milk, one of cream, another of soaked ladyfingers, and finish with a layer of cream.
10. Place the tiramisu in the fridge for at least 2 hours.
11. Decorate the surface of the tiramisu with peach slices and a handful of crushed amaretti biscuits.

I would have definitely blanched the peaches to remove the skins from them. That's gonna be an off-putting texture in the middle of a soft, fluffy dessert. Plus, maybe simmer the milk with a vanila bean or add vanilla extract? Otherwise, I bet this is delicious!
