on mt. panorama there's a kangaroo hopping thru a field also. its after the squiggly bits and on the later straight before the sand trap its off to the right

Fun fact the part of Bathurst (Mount Panorama) you see the UFO at is called Frog Hollow

Each different part of the track has a different name to it

Like the first corner after the main straight is called Hell Corner, or the long straight after the mountain section is called Conrod Straight which leads into The Chase

I believe there's a bear at trial mountain too after the tunnels on the back straight.
