How to remove a bath

how do you cap off with plastic pipes. I tried using a cap, but with dire consequences, I had to have the water off for all the time the pipes were without taps

How come in the previous video you used a speed fit plastic cap off, but in this one you used the copper cap off with an elbow?

I like that you done that so I can see alternatives but is there a specific use case for using each one ie copper or plastic cap offs
