SPANAKOPITA TRIANGLES WITH FILO PASTRY: In this video, I'll show you how to make Homemade Spanakopita Triangles and how to fold the filo (phyllo) pastry to form the triangle shape. These are Insanely Delicious!

INGREDIENTS YOU'LL NEED:
Spanakopita Triangles
recipe by shereen pavlides
{makes: 20; serves 8 - 10}

Note: if using store bought filo (phyllo) dough, double up the sheets, using 1 (16 ounce) package

2 (11 ounce) packages fresh baby spinach (1 1/3 pounds total)
kosher salt and fresh finely grated black pepper
3 tablespoons olive oil
1 extra large onion - finely diced
6 - 8 green onions - sliced; whites and greens separated
3 large eggs - room temperature
2 1/2 cups crumbled good quality greek feta
1/2 cup chopped parsley
1/2 cup chopped dill
{if using store bought - see note above}
1 1/2 cups unsalted butter - melted

Wow, this video is so great. I just got married not too long ago to my Greek husband and all he talks about is when his mother used to make spanacopita from scratch. I think I will make these for him from scratch and surprise him on his Birthday. Thank you for making these wonderful videos I am learning so much from you. I am Italian and I enjoy cooking a lot. This recipe will be welcome addition to my recipe collection.

Hi Shereen - Thank you for this amazing recipe! I have them baking in the oven right now!!! It was my first time making filo, and I ruined 9 of the sheets, but the others made it through. I was trying to minimize the amount of cornstarch as I thought you suggested, but that made the sheets stick together during the first stacked roll out. They become stringy when I tried to pull them apart to flour them page-by-page. I realized you were using more cornstarch then I was, and luckily the second batch survived.

The filling is DELICIOUS! Thanks for a great recipe!

I made this for my two boys yesterday! I had to use store-bought filo but I was surprised at how big the sheets were so I folded them in thirds. They were delicious! Now it's one our family favorites! I also made corn, cheese and ham ones!

Spanakopitakia are the triangle ones spanakopita is the pie version! Looks awesome, liked my Yiayia used to make. My Papoulie didn't like fill, so she used mint. Also very good! ❤️
