Super cool. Congrats on your endeavor. I would suggest that you not try to reinvent the wheel for the lower level stuff. Everything from tuners to pitch shifters already do note onset and pitch decoding. Leverage whatever you can from github. A2M from Beat Bars (free beta) does a pretty good job of tracking guitar - the main deal-killer for me using A2M, is latency. The latency I've measured with A2M is 25ms and most anyone would feel that. Only a very slow performance can accept that kind of latency. Needs to be about 8ms or less for me to stop caring about it. I imagine your goal is just monophonic. If you could do polyphony that would be amazing and make it more useful, but decoding multiple notes from a chord is super-non-trivial, and requires a ton of CPU. I'm pretty sure polyphony is realistically only achievable with hardware (eg. hex pickup) which has the advantage of separate signals for each string.
