Easy Keto cracker replacement - cheese crisps!

One of the things people seem to miss the most when they give up grains is crackers—cheese and crackers especially…. But what if the cheese could be the cracker? (Mind blown, right?) You can pay a premium for ready-made versions in the store, or you can spend less than ten at home making your own for a small fraction of the cost. Just see how easy is it.

Cheese Crisp Recipe

Servings: 6 crisps

Prep Time: 1 minute

Cook Time: 7-10 minutes

Ingredients:

1/2 cup finely shredded cheddar cheese
Instructions:

Preheat oven to 400 ºF/205 ºC.

Line a metal baking sheet with parchment paper.

Finely shred a cup’s worth of cheddar cheese (or use bagged finely shredded cheese). We’re using cheddar here, but this recipe works for other hard cheeses such as Parmesan, colby-jack, etc. Note: finely shredded cheese will melt more quickly and evenly.

Take a generous pinch of shredded cheese and spread out in an individual circle on the sheet. Gently press down. Repeat until parchment sheet is full, leaving a couple inches between cheese circles.

Heat in oven for 7-10 minutes. Take out and let cool at least 5 minutes.

Serve with your favorite salsa, guacamole, sliced meats or sauces.

Oh you can do so much more than just snack chips; we turned it into a large tortilla; filled with all sorts of délectables; or you could make a quick mini pizza.

So these did not crisp up if you were able to fold them without breaking them. I think you had your cheese shreds piled on a bit too thick. They should be spread out thin. I made the same mistake a few times until I figured it out. You should be able to see parchment paper in spots between cheese shreds. There should be holes in the finished crisp.

I make them corn tortilla size and use them as taco shells.

Try sliced cheese. Use a pizza cutter diagonally (corner to corner) to make 4 chip "triangles". 375 degrees, not 400, check them at 10 minutes and expect them to be done at 12 minutes. Cheese should be cheddar or colby jack.

This works great if you fry it in butter too. Put it medium high to make them crispier or medium low to make them

It isn't nearly as easy as it looks. I tried making them a few weeks ago before seeing this video, which is doing the same thing I was doing. The problem is the window of perfect crisp is pretty small. First batches were too soft, following batches got too burnt. The seem to go from crispy to crappy pretty quick. I love the packaged ones from the store and I am addicted, but they are expensive as hell.

Some pre grated packs of cheese can contain flour to stop it sticking together so beware.

Why not use cheese slices-less carbs if using shredded cheese with potato starch or cellulose added, or the extra work of shredding the cheese?

I have tried these so many times, with different cheeses, different cooking times, but they always taste bitter. The browner they are the more bitter, so have tried to cook them to different colours, but still bitter after taste.

I use sharp cheddar cheese slices on a microwave-safe plate, and microwave it for 3 minutes on a 900-watt microwave. Let cool, You're welcome!

Shred your own cheese, and it’ll be cleaner because the pre-shredded has additions to keep the cheese from clumping.

Do these come out crispy all the way through, or are they chewy in the middle? I have tried making them smaller, but they have a strange chewy consistency and never seem to get crispy except for the edges.
