My goal with the book is to equip bakers with the knowledge and techniques to make all kinds of baked goods. With that in mind, the book begins with a breakdown of common mixing methods. For each mixing method there is: 
- a general set of steps to follow 
- an exemplar recipe that uses that mixing method 
- explanations for why a few key steps are particularly important for success 
- photos showing exactly what would happen if you change the procedure

I have baked since I was 12 years old never once in my life have I ever mixed up my dry ingredients and they have came out perfect each time muffins, cookies, pies, tarts, and cakes etc etc.

Oh I can see that stain in the paper, reminds me of some of the books in my kitchen. Good cooking books somehow are either messy or worn off

I always add the leaveners to the wet ingredients and after it’s all incorporated, I add the flour. Saves me from dirtying another bowl and my muffins come out perfect.

I've got an idea for another comparing video - flapjacks! How the different ratio of oats, sugar, syrup, butter etc, affect the crispiness, chewyness, and softness of flapjacks. Some recipes call for flour or baking powder, others don't. I came across one recipe that uses condensed milk for soft flapjacks.
Even when baking them, how using a shallow or deep tray will affect the texture.

You let your muffin batter rest? We were always taught to get that batter into the oven, before the leavening is depleted. Interesting.

I never use two bowls, just mix the dry ingredients first and pile the wet on top.
Always stop mixing when you _think it might_ be free of streaks, if you're wrong you can fix it as you scoop.
