Pavlova is an Australian/New Zealand dessert. We first learned about it when we watched an episode of Nadiya Bakes on Netflix. I love meringue, and this was like meringue to a whole new level. That was our 1st attempt at pavlova.

We’ve experimented quite a bit since then, and this recipe is how we like our pavlova. Pavlova can be quite finicky, until we discovered the Swiss Meringue method of creating the meringue, courtesy of an America’s Test Kitchen episode we watched. It feels pretty foolproof now, and we’re happy to finally share our love of pavlova with you all.

Summer Berry Pavlova Recipe:

INGREDIENTS AND INSTRUCTIONS:

MERINGUE:
Sugar - 1 cup
Egg whites - 4
Cornstarch - 1 tsp
White distilled vinegar - 1 tsp
Vanilla extract - 3/4 tsp

1. Prepare a double boiler
2. Whip sugar and egg whites to 160°F - 165°F
3. Whisk on high until you get stiff peaks (~4 minutes)
4. Add cornstarch, vinegar, and vanilla extract
5. Whisk on high for several seconds
6. Spread in a circle
6. Bake at 250°F for 1.5 hours
7. Turn off oven, and prop it slightly open about a couple inches
8. Let it sit in the oven for at least 1.5 hours

WHIP CREAM:
Heavy whipping cream - 175 ml

1. Whisk until thick (don’t over whisk or it’ll become butter)

BLUEBERRY JAM:
Blueberries - 1 cup
Sugar - 1/4 cup
Lemon zest - 1 tsp
Lemon juice - 1 tsp

1. Simmer everything on medium heat for ~ 6 minutes
2. Mash the blueberries with a fork while simmering
3. Separate the blueberry skin and lemon zest from the jam
4. Store in fridge to cool down

TOPPINGS and ASSEMBLY:
Blueberries and raspberries - 2 cups

1. Place the meringue on a plate
2. Top with whip cream in an even layer
3. Pour jam over the whip cream
4. Top with blueberries and raspberries (or fruit of choice)

Note: This will not keep well, so try to enjoy it the day you make it, or wrap and store it in the fridge for 1-2 days.
