Water radish kimchi (dongchimi) recipe
Ingredients: Radish 3.3lb, coarse sea salt 2T, green onion 1 bunch, serrano pepper 3ea, red pepper 2ea (optional)
Kimchi juice: Water 7C, plum extract 1.7oz, coarse salt 2T
Blend: Asian pear 5.3oz, onion 3.1oz, garlic 2.4oz, ginger 0.7oz, water 2.3 fl oz

1. Wash and cut radish (DO NOT PEEL) into 1 inch half moons. Sprinkle 2T of coarse sea salt and let it brine for a total of 1 hour. After 30 minutes, mix the top and bottom so that the radish brines evenly.
2. Use a fork to make holes in the serrano peppers.
3. Blend pear, onion, garlic, ginger and water.
4. Use a strainer bag to filter the blended ingredients and massage the bag thoroughly for at least 10 minutes. Mix with water, plum extract and coarse salt until all the salt is melted.
5. In a kimchi container, add green onions, brined radish (including all brined liquid and salt), serrano peppers, and the kimchi juice.
6. Let it sit at room temp for 1-2 days, then move to the fridge.
