GATA, Armenian Pastry with Walnut and Cardamom

Gata is an Armenian pastry . There are many variations of gata in Armenia and typically specific towns or regions will have their own version. It can be found in a variety of shapes, sizes and may be decorated or left unadorned. Long ago, gata was baked in a tonir, but it is now baked in ovens. The bread is traditionally eaten at the feast of Candlemas, but is eaten during other festivities too or simply baked to enjoy with a cup of tea or coffee.
In this video, we want to show you how to cook gata with walnuts, cardamom and grape syrup.

Ingredients :

For the Dough :
All Purpose Flour 2.5 Cups
Unsalted Butter 150 g
Plain Yogurt 1/2 Cup
Sour cream 1/2 Cup
Sugar 1.5 tbs
Baking powder 1 tsp
Vanilla 1 tsp
Salt 1 tsp
1 Egg Yolk

For the Filling :
All Purpose Flour 1/2 Cup
Clarified Butter 2 tbs
Grape Syrup 4 tbs
Walnut 2 tbs
Cardamom 1 tbs
1 Egg separated
