Handcuff their feet together. Seen plenty of videos of people with no hands/ arms have trained themselves to use their feet for almost anything. Even saw one a dude pulled out a pistol and rack the slide

Depending on how far the arm is amputated. If it’s just at the wrist, use extended cuffs. If it’s any higher, you can use a belly chain and wrap it higher on the body and cuff the arm then attach the other cuff to the belly chain.

Realistically you would just let them have their arm. If they are prone to aggression, use a hobble strap around their waste and attach the cuff to that (obviously the release would need to be on the side not near their hand).

Why don’t police officers use more updated handcuffs? Handcuffs that are a lot easier to deploy and attach so that the officer is less likely to get hurt with more struggling than there needs to be?

Just handcuff the arm then handcuffs the other arm both together and then just put tape over both of them but if it don't work then just put on a lock on the thing that looks familiar to almost every other key

Legs would work. If they doesn’t even have legs, just put dog collar or something.
