Hi Vickie 🌸 this looks soo good! I think zucchini & squash are overlooked vegies....most people don’t really eat them much & if you do & you grow them yourself you end up with millions of them so this is an easy tasty recipe to remember. Thanks for sharing 🌸

I call these yellow diamonds and emeralds ***line a sheet pan with padchment paper. Oven at 400 degrees i just cut them into one qurter inch disc into a bowl and then drissle with olive oil salt and pepper to taste toss it well and place on sheet pan side by side not over lapping a9nd cook about 30 minutes or so, they are so delicious when they actually start ccrmalizing.
