(Serves 2)
Ingredients: 
- 1 cup cooked wholemeal couscous 
- 2 cup baby spinach
- 1 cup diced pumpkin
- 1 cup cauliflower diced
- 2 red onions chopped in quarter 
- 1.5 cup chickpea 
- ½ apple diced 
- 2 tbsp pecan 
- 2 tbsp raisin 
- 1 tbsp olive oil 
- 1 tbsp ras el hanout (or your favourite spice mix)

Dressing: 
- 2 tbsp tahini 
- ½ cup lemon juice 
- 1 tsp agave syrup 

Instructions: 
- Preheat the oven to 180C. 
- To an oven tray with baking paper, add the diced pumpkin, cauliflower, red onion, chickpeas, olive oil and ras el hangout. Mix to coat the spices and olive oil on the vegetables
- Cook in the oven for 20 minutes ?! Add the pecan 5 minutes before the end 
- In the meantime prepare your couscous according to the packet instructions 
- Add the tahini, lemon juice and agave to a bowl or small food processor and whisk together.
- To build the bowl add the baby spinach, couscous, roasted vegetables, apple and top with the pecan and raisin. Cover with the tahini dressing. Enjoy 🤍
