Different size siphons require more or less chargers...also cool tip use melted chocolate in these instead of cream and you can make aerated chocolate. But another cool use is cake batter or deep frying batter in a siphon to add some extra bubbles. The best way to use a siphon is for meringue, a lot of people struggle to make perfect meringue mixture so a siphon is the best tool for meringues

Classic ChefSteps is always welcome.
A note, I haven’t yet found a recipe that subbing xanthan with locust bean gum 1 to 1 hasn’t improved the texture. LBG is much smoother, less “spongy”, and has better flavour release than xanthan. Only downside is that it’s slightly harder to find, but Modernist Pantry always has both in stock.

Never used a whipping siphon...but in the 70s I had a friend in metal shop contrive an enclosure for the cartridges. Why? To fill balloons with the N2O so we'd fill our lungs to get such a high - what a rush. Now I look back and think how silly it was...the Mickey Mouse voice you get for a few seconds and the short-lived high. Goes well with a case of beer. Lol

👍 Awesome, thanks for posting! I bought a siphon just to save me from whipping cream for the desserts I bring to every holiday, birthday, family gathering etc. Tired of lugging my hand mixer, finding a place in someone else's crowded kitchen to do so. (I copped out & brought a can of 'real whipping cream' and got booed, lol)
