Today we prepare brodium Sarracenium from the Liber de Coquina, one of the most important medieval cookbooks, written in Latin around the end of the 13th century.

Ingredients:
chicken
white wine
bread
cured pork fatback
almonds
dates
raisins
lemon
spices (long pepper, cinnamon, nutmeg, saffron)

I just got a flat with an almond tree that I’ve helped bring back to good health, but I only was able to get about a dozen almonds from it; I know what I’m using them for now! Grazie!

Here my notes:
I added powder nutmeg, cinamon, and black peper in sufficient quantity (i even thought it was too much), i used grilled bread, lemon juice, and for the liver, mine was so small, even though my chicken was 1, 9 kg.
The sauce wasn't too liquid and thick as yours.
For the saffron, i've got powder and put them down to the warm water.
After my dish was ready: everyone loved it, but not me: couldn't smell the nutmeg, cinamon, black peper and saffron.

Do you have an alternative if we can't get chicken liver. i've the feeling you've got everything at your home, so you're not depending on the restrictions of the supermarket.
And do you give us the quantity of liquid in your ebooks ? That's hard to follow a recipe without knowing how muche we should add up in. I'm measuring with my eyes xD
