The fact that your vg10 performed better after time is a significant sign that fällkniven overheated the edge a little but durung the sharpening process which is - sadly - kind of normal due to production speed.
While sharpening you take away material and eventually will have ground away all the overheated material. That is why it has better edge retention now

Ah yes, our pursuit of fine knife steel. My first knife was a buck 119. I still have it. Then, a Boy Scout knife, normark, martiini, and on and on and on. I am a blessed man. I honestly cannot say I have a favorite because I cherish all of them.
