Chefs around the world have been putting their own spin on paella for years, adding everything from avocado to chorizo to grated cheese to the mix. This gives Guillermo Navarro indigestion. Not literally. But figuratively. Navarro isn’t OK with anyone tampering with the delicious dish that originated in Valencia, Spain, and is a source of cultural pride for the region. Which is why he co-founded Wikipaella, an online resource for anyone who wants to learn how to make authentic paella Valenciana. Come on, the faster we get cooking, the sooner we can eat.

Keep the old school, traditional origins of the dish but don’t stop others for experimenting, it would be like enforcing the idea that you can only have one type of pizza.

The Philippines was colonized by Spain for more than 350 years. And we have been cooking "Paella" (We pronounce as pa-el-ya) for as long as I can remember and most of the ingredients are the same but we do it like a cross between Spanish Paella and Chinese fried rice😊

My best friend is Spanish and he always puts chorizo in paella because it tastes fucking great. Same way I'm British Indian and I eat curry with chips. It tastes nice.

In the Philippines, we also have a (kind of) similar dish, Arroz a la Valenciana. Instead of the short grain rice, most use glutinous rice and for saffron, turmeric.

It's ok if people want to experiment and end up liking different flavors in their paella. If he wants to do this to find places that make traditional paella its fine but if you like avocado and chorizo in your paella, go nuts. You are allowed to like things that aren't traditional.

Here in the Philippines we also eat and cook Paella.
It's usually served during Fiestas or any special occasions, because it's very tiring to do the dish every day because of its intricate procedures.

We call them, Paella Valenciana and in some regions they call it, Arroz a la Valenciana.

I understand the passion for this. He’s not being a snob he just wants people to enjoy the OG dish. I’m Italian and I never eat Italian food abroad because I know it’s gonna be a mess unless I pay 3x what I would pay in Italy for it.
