Had the best paella last week at restaurant BonAire in El Palmar, absolute chef's kiss. An hour bus ride from Valencia and 100% worth it.

I went to that excact same market like a year or 2 ago and i bought so much paella mix and other spices, everything was so fresh and flavorfull from there, also allot of beautiful fresh fish and meat, absolutety wonderfull, and honnestly cheap for what you get

You know a paella is good when you dont leave a single grain.

We had it in spain. It was burnt and the rice was undercooked. Just kidding, thats how its supposed to be. The rice is cooked al dente and its charred a bit on the bottom. If the rice is cooked evenly like Chinese food then you are getting tourist paella.
