My favorite seasoning is a thai sauce that's a bit like the thai equivelent to ketchup (in that they put it on everything). All it is, is a 50/50 mix of lime juice and fish sauce, then dump alot of minced or chopped garlic, cilantro, and thai chilis (or any kind of pepper really, but thai chilis or something similar work best) then just mix it all together and your done. optionally you can add some sugar too. it sweet, sour, and spicy and goes great with any fish or shellfish, the solids can be dumped on meat or rice or you can use the sauce part as a dipping sauce.

That's suprising, the crawdads here in Virginia are 3x that size. Unfortunately the creek where I used to catch them dried up 13 years ago and it wasn't common to find them in grocery stores here untill maybe 4 years ago.
