If gluten is causing someone issues, before jumping from conventional bread to sourdough ancient grain bread it would be wise to give your body a rest first

I can't agree with this, gluten is in bread, homemade or not, even organic bread. It's been in ancient food for hundreds of yrs, it's in the Bible. My insane sister, who's dead by the way, believed what Drs told her that gluten made you crazy and she was insane anyway, weighing over 350+ LBS for most of her life dying at 50 of a heart attack or stroke. Sourdough is a tough bread to eat.
