Artificial banana flavoring (like what you find in Laffy Taffy, Runts, or banana pudding mixes) is usually based on a compound called isoamyl acetate, also known as banana oil. It smells super strong and sweet—almost cartoonishly "banana."

The kicker? This flavor is closer to an older variety of banana called the Gros Michel (aka “Big Mike”), which was the dominant commercial banana until the 1950s. It had a richer, sweeter flavor compared to the Cavendish bananas we eat today.
