John Yudkin, (1910-95) was a British physiologist and nutritionist and one of Keys' contemporary, took such a shit kicking' yet his book " Pure, White, and Deadly "was based on real science and is still viable and worth the read.

so sad, in the 50s my Mom was told margarine was a healthy choice and the price was dirt cheap so I grew up never having butter, while living in the middle of a diary farming area, sigh - I'm not real happy with the evil of Big Food

Pesticides, pollution etc may have some effect but it is very difficult to limit them. When you fix your diet that fixes these problem, ergo pesticides and pollution is not the main cause.

Awesome talk. I'm so grateful for the day I stumbled into the movie The Widow maker in which Ivor was involved in some way I don't remember. Then I watched the cholesterol video he mentions here, bought the book "Eat rich, live long" and started my own health journey. Two and a half years into a keto lifestyle, OMAD. I can say I was right on the path to heart disease, I had high blood pressure and supposed to take drugs for life, almost chronic joint pain (had been seeing a rheumatologist since the age of 43), frequent migraines, and a big waist. All of that is long gone. Blood pressure was down to my youth's values in a few weeks after giving up sugar and refined carbs, and gone was the joint pain. NEVER had a migraine again. Lost 20kg and I'm now at the weight I used to be when young (51 now). This man is a jewel, same as Dr. Lustig, Dr. Mason, Dr. Young, and many others I forget now. Thank you Ivor, you really are saving lives.

Nice tan Ivor.

I will make the lamp array you hinted me about, but now I get NIR and UVB from the skyes. Yes the tan stuck even in freezing January here in Finland. One just has to endure natures elements in bare skin. Exposure time of 20min at least is required. All this is very much thanks to the visible and near infrared light, I speculate. The tan is proof of UVB/A and vitamin D over 118. Thanks to winter swimming and not too much omega-6 in the hypodermis could be beneficial. Less PUFA is seemingly making me highly resistant to sunburn, but also less resistant to cold waters. The cold water fish theory makes a lot of sense. Too much saturated fat in the skin WILL freeze if exposure exeeds 18 minutes and challenge the capillaries in the skin. Happened to me twice when the water went below 4 Celcius and it leads to nasty inflammation of the capillaries that can last for 42 days (time to heel skin damage in general). But now I can be exposed to the rays of sun in short sleeves all day long, and if I can handle the cool waters, all is good.

The science behind mixed macro eating is catching up too. Just tried to get my head around the latest LowCarbDownUnder with Richard J. Johnson Nature wants you fat ep.2 pointing salt-water-fat-fructose interaction.

Hi Ivor, You would get a lot agreement with Prof Tim Noakes in South Africa. Has also written a lot of books on your subject with lots of data. The food industry tried to destroy him in the law courts, but he proved them all wrong.
