Only possible explanation to fields cancelling behind the plates is that plates are not purely charged with only one kind of charge ( + / -). You have drawn only one layer of charge on each plate, but you actually should have drawn two layers of opposite charges on both plates. This woul then make sensible to draw these field lines behind the plate 1:01 . Am I correct?

Hey, found this video because it's late and I'm braindead. Thanks for helping me remember. I know it's been a long time since this was uploaded but I just wanted to point out that this is for an insulator only, conductors would instead have σ/2ε between them instead. that's sigma/2 eps in case your device doesn't display the correct letters.
You sound like a cool dude btw, how old were you when you made this?

how can the electric fields on the outside cancel each other out. the magnitude of the negative vector is different to the positive one, as electrical field at a point is deepen on the distance from the charge.Hence they don't cancel each other out right????....
