You shouldn't use cheese cloth for the top. Bugs and flies can get through it easily. Use a t-shirt instead. The weave is much tighter and the bugs and flies can't get through. I use pillow cases with a high thread count. This will also prevent infestation.

I tried making this and it was no bueno even using cheesecloth.

Pineapple water from the boiled rinds, filtered, then cooled in the fridge is delicious.

The original recipe only uses pineapple peels, water and piloncillo.
Furthermore, refined sugar is not suitable for vegans.
