As a Canadian chef, who competed on TOP CHEF CANADA, I get asked all of the time, "what is Canadian food" This is one of my many responses to this question. It is so simple to prepare and takes smoked salmon and cream cheese to another level. The sweetness of the candied lemon balanced with the cider pickled shallots are so delicious. You can prepare this one ahead of time for holiday appies or a simple quick snack to cure your "hangry" mood.

I have done this dish so many times in many different ways and I always get asked to share the recipe, so here it is.

One of the greatest things you can do for people who have lost their work due to covid is to support them when you can. Many restaurants and chefs have had to change gears and follow a different path to serve the public in any way they can.

Sure does take smoked salmon and cream cheese to another level! And, thanks to you, I finally have been shown how to candy lemon (peels). Was that also pickled onion you put on along with capers?
