Pan Seared Scallops Over A Pea Puree & Chive Oil

This is part 1 of 3, of our Cook to Impress series for either date night or Valentine's Day, that or if you're just hungry person and want something good to eat. Anyways, we're making Pan Seared Scallops over a Green Pea Puree, drizzled with Chive oil and saffron butter. This series of videos is to help guide you with a couple of dish ideas, so feel free to change around ingredients to your or their liking.

Ingredients
1 Pound of Fresh Sea Scallops (the large ones and this is about 6 of them)
1 Pound / 1 Bag of frozen green peas
.5 ounces of Fresh Chives
1 Teaspoon of Saffron
4 Tablespoons of unsalted butter
Juice of half a lemon
1/2 Cup of Extra Virgin Olive Oil (for the Chive Oil)
3 Tablespoons of Extra Virgin Olive Oil (for the pea puree)
1 Tablespoon of fresh Thyme
2 Medium Shallots
3 Cloves of Garlic
