Cast Iron Campfire Cooking. Braised Leg of Lamb Cooked in a Dutch Oven.

In this video, I am out in the woods with my four legged companion Maggie to cook up an Easter feast of braised lamb in red wine. Sat on a grill over the campfire in my cast iron dutch oven, it cooks slowly ensuring the meat is lovely and tender, gently simmering away in a stock of red wine, garlic and rosemary. Absolutely delicious!

Recipe

1/2 leg of lamb
Three medium potatoes, peeled and cut into chunks
A bunch of tiny carrots
Three shallots, peeled and halved
Three cloves garlic, peeled
A couple of sprigs of rosemary
Two lamb stock pots
200ml water
A very generous glug of plonk (red wine)
Oil
Salt and pepper for seasoning
Plain flour
Gravy granules

Dust the lamb with flour seasoned with salt and pepper
Brown the lamb in oil in your dutch oven (lid off)
Cut three slots deep into the lamb and push in the garlic cloves
Add the spuds, carrots, shallots, water, stock pots, wine and rosemary
Put the lid on and load on some coals
Cook over a gentle heat (coals) for about 11/2 hrs
Turn the dutch oven occasionally and check how things are going - adjust heat and coals as neckwear to keep a gentle simmer
Remove meat when it is cooked to your liking, remove veg and mix in gravy granules
Return to there heat and stir until the gravy thickens
Serve up and enjoy with the remaining wine (glass optional)

I love how Maggie first got on her blanket. She just took up half of it like she was saving a spot to share with you! I’ve never tasted lamb before! I’m sure it was yummy! I was so ‘in to’ the vid while the pot was cooking I felt the smoke in my eyes. 😂 Well done! ❤️❤️

For my taste, and I think a lot of others, this is how one goes about enjoying the spirit of the outdoors. Simple, satisfying and not overly complicated. Gives you time to actually bask in the wonderful beauty that nature has to offer. You, my friend, have found the key. Well done mate.

I used to live in France and did this type of cooking in my 2 acre garden, now, after a stroke and back in Suffolk, I have a Weber and cast iron pot. love the friendship with Maggie you have . I got a leg of lamb today. so thanks for the inspiration sir. great post. and Thank you in October 2023 from a royal navy veteran in Suffolk, England.xx

Just the way I like it, wine drinking bushcraft style along with a delicious feast. 😊 I love roast lamb. Unfortunately, I married into a non-lamb eating family so I suppose for me the deprivations of Lent will be extended into and beyond Easter! 🤣 Good to see Maggie out and about again with you.
