Recipe For Lamb Shanks In A Cast Iron Dutch Oven Outdoor Cooking Camping

I will be slow cooking lamb shanks over some wood coals for 2-3 hours braising it with stout craft beer.
** GET THE GEAR ON AMAZON**
The dish is an adapted one, but basically I wanted to pull in the traditional flavours you would use with lamb.
The dish....
4 Lamb shanks
Put them in a large ziplock bag overnight with the following
2 tbs salt
1 tbs pepper
2 tbs rosemary
4 garlic cloves minced
Once you get your Lodge cast iron 12 inch dutch oven warmed up with a layer of oil. Place the shanks to brown them on each side. This should take about 10 min depending on how hot your dutch oven is.
Remove the shanks, now place the following:
1 can diced tomatoes
1 onion diced
1 tbs of fennel seeds
2 tbs of smoked paprika
1/2 tsb of red pepper flakes
2 tbs of flour
Stir the tomatoes and onions let it cook for about 10 min. Then pour in the dry ingredients. This should make a semi paste.
Place the shanks back into the dutch oven and pour 1 bottle / pint / 500 ml of stout beer. You can use a stout or porter beer. What we want is to pull in the chocolate & coffee notes from the beer into the lamb.
If the liquid doesn't seem enough, simply add a 1 cup of water.
setup your coal for a 2-3 hour cook. rotating every 20 minutes the dutch oven clockwise and the cover counter clockwise a quarter to distribute the heat.

I added corn for the last hour of the cook. this came out perfect. I was really happy how everything came together.
The surprising thing is that the stout beer wasn't as present as you might expect. It was more the paprika & red pepper flakes that dominated my taste palette.
overall this meat which literally fell off the bone was a winner dish. the smells from the basic herbs should convert anybody who isn't a lamb fan.
