I have made this kind of mousse many times! It can be VERY tricky, over whipping makes it grainy, not combining the water and chocolate correctly can also ruin it.

This method you have come up with looks AWESOME! Easy and fool proof, I am so impressed!

It turned out SO well! This is my first time ever making mousse, my family doesn't like white chocolate so I just doubled the amount of milk chocolate, swirled some whip cream over it and topped it off with fresh raspberries and can I just say it was DELICIOUS! It was so cold and creamy and surprisingly filling! Definitely going make it again thank you for this WONDERFUL recipe😋

I'm enjoying this right now. I piped it in a small bowl and let it set, scooped out a spoonful and there were soooo many tiny air bubbles! It tastes super silky and it melts in my mouth and tastes exactly like fudge, so simple but AMAZING!!! It's shocking how good this is!!!

This is a great mothers day surprise. Super simple, can be done by any child allowed to use the microwave, meaning it can be used by many children to impress their parents! I love it!

This is a great re-make of the classic Chocolate Chantilly recipe that you mentioned. Yes, I can see your method is far easier than the ice bath method. I think this would be fabulous for a dinner party where you want to serve your guests something impressive but you don't want to fuss. Plus, this can be made a little bit ahead, so you can enjoy dinner, too. Sometimes, that's the hardest thing for a host.
