What grade are the gelatin sheets? Titanium, Bronze, Silver, Gold or Platinum? All have different bloom ratings and will affect set.

I make panna cotta often, and my favourite vanilla panna cotta is served with strawberry compote or syrop made of "frutta di bosco" meaning berries.
