Hi Akis, one question! I have noticed that yourself, John from FoodBusker and even Gordon Ramsay are using the Santoku knife much more often than the chef's knife, if not all the time. My question is, as i might buy a new knife soon, would you recommend a Santoku knife over the chef's knife and why ? thanks.
