Made your Italian Pasta salad and it is chilling the refrigerator, thought there was a way to add a picture in my comment but couldn’t get it to take. My friend is coming for dinner, serving with French Bread and lemon bars (store bought) for desert. P.S. I’m 87 and you inspire me to cook again.

...I understand about rinsing the pasta, but that takes away the starch, which helps the dressing " adhere " to the pasta and the ingredients. My grandmother said to not ever rinse pasta, lol. She also used the pasta water ( a tablespoon or so) to the pasta sauce as well.
The salads do look good, I've made a similar Italian Pasta Salad . I also used half slices of Red Onion and sweet Red Pepper. I made a BL T salad, used baby spinach, instead of Romaine ( I prefer.the crunch of Romaine, lol..it was what I had on hand) but made a Dressing of Mayonnaise, a bit of sour cream, squeeze of lemon juice, tiny bit of garlic, splash of buttermilk, salt, pepper, dried dill, and a few pinches of sugar. It's delicious.

When I make Italian pasta salad I like to mix half Italian dressing with half mayo. I feel it helps the dressing cling to the pasta better.

Love these for summer. Using chicken simmered in italian dressing or even chunks of pepperoni, is sooo good too..I like to put the pepperoni in while the pasta is still hot. It takes on some of the flavor. Try greek dressing with chicken as well. All one pot. Thank you again.
