Ingredients:

Gnocchi
- 175ml water
- 80g unsalted butter
- 125g flour
- 20g pecorino grated
- 2 eggs
- 1 tbsp salt
- 1 tbsp dijon mustard

Garlic Butter Sauce
- 1 bulb of garlic
- 1 tbsp smoked paprika
- ½ seed of nutmeg, finely grated
- 20g pecorino, grated

Method:
1. Preheat heat oven to 180C
2. Slice top off head of garlic and drizzle with olive oil followed by salt, pepper and smoked paprika
3. Place in oven for 30 minutes, until garlic is nice and jammy
4. Meanwhile bring the water and butter to a simmer, before adding in a pinch of salt and the flour in one go. Whisk until you have a smooth paste.
5. Take pot off the heat and let cool for 5. It needs to be warm still though.
6. Once cooled slightly, add the pecorino and one of the eggs and whisk until fully incorporated. At this stage add the second egg in and whisk followed by the Dijon.
7. Add mixture to piping bag.
8. Bring a pot of salted water to a simmer. And after cutting top off piping bag gently squeeze bag so mixture comes out before chopping mixture off with a knife every 2-3cm or so.
9. Once they float, continue to cook for another 2 minutes before placing onto a oiled pan, so they don’t stick.
10. Remove garlic from oven, and squeeze out the cloves.
11. Add the gnocchi and the garlic to a non-stick frypan on medium with a table spoon of oil and a knob of butter.
12. Cook until gnocchi are browned before serving on a plate, pour over the pan sauce, followed by the nutmeg and the pecorino.
