I really enjoy your You tube videos, I am inspired by understanding and research. I found your channel because I was looking up the baking powder chemicals. I was or I guess still hold the title of Pastry chef. I have been using chemicals all my life in my industry with little to no understanding of how the ingredients are made, or made up of.
your video helped me to understand why the acid was and is so important in the process or baking and what happens when heat is added to activate. I never stop learning and appreciate your video even tho I did not understand most of it, I was able to make enough sense of it to make a difference in how I deal with Soda and Baking pwd in the future.

Great channel bro, i discovered it today searching for the chemistry of the maillard reaction and immediately subscribed.
I would like more videos on the chemistry of food and, if u watch anime or read manga, i recommend you to read or watch dr stone, it's fun and there is a bit of chemistry that is actually right in it, wich is refreshing.
