Easy Pecan Snowball Cookies

These pecan snowball cookies are so easy to make and they are so good. One of my favorite cookies.

Ingredients and Directions
1 cup all purpose flour
1 stick (1/2 cup) softened butter
3 tablespoons granulated sugar
1 cup chopped pecans
1 teaspoon vanilla extract
1 cup powdered sugar (for rolling the cookies in once they are done)

Mix together all of the ingredients, except the powdered sugar, until everything is combined. Wrap in plastic wrap and let it sit in the fridge for thirty minutes, or longer. You don't even have to let it sit in the fridge.
Roll you dough into one inch balls and place on a non greased cookie sheet, or lined with parchment paper.
Preheat your oven to 350 degrees F.
Bake for around fifteen (15) minutes, or until set. You really don't want them browned.
Let them cook for a minute and roll them in powdered sugar. once they are cooled, roll them again in the powdered sugar.

I just toasted pecans for a different thing I made today.
Toasted makes such a huge difference. Really worth the time.
Very fun cookies. I've never made Pecan Snowballs before.
They really do look like snowballs! Love that.

These are really similar to the Russian tea cakes I make at Christmas. I know how crisp and flaky they will be. Love the powdered sugar coating. 😊❤

I like cooking with crickets also. They don't have a lot of flavor, but they are really good in any pecan recipe. Lots of added protein and low cost.
