If you want to eat locally in Italy, finding a good Osteria or Trattoria is going to be your best bet. They will be a bit more rustic than ristorante, but the menu will be focused on local dishes. I would recommend getting one thing you don't recognize or already know about each time you go. You'll be amazed that it might be your new favorite dish. Personally, I go to l'osteria del cinghiale bianco every time I'm in Flornece, but this was my first time trying the Pappa Al Pomodoro. And I already want to go back for another bowl.
