Ingredients:
- 2 lb lamb shoulder
- anchovies
- large carrot
- 2 white onions
- celery with leaves
- 3 potatoes
- garlic
- chili pepper
- fresh thyme
- white wine one cup
- white wine vinegar 2 tbsp
- salt
- pepper
- plum tomatoes
- 250ml stock
- fresh peas
- bread

Steps:

A)
1: Cut lamb into 1 inch wide chunks
2: Combine in mixing bowl with salt and pepper and EVOO
3: With a large pan on medium heat, dissolve anchovies
4: Add the lamb and sear, making sure there is color on all sides ~a few minutes
5: Chop 1 large carrot, 2 white onions and celery, add to pan and give a little stir now
6: Add a few cloves of garlic, chili pepper to taste, keep stirring it
7: Add some fresh thyme and caress your love
8: Add about a glass of white wine and 2 tbsp white wine vinegar, keeping stirring until the wine is almost evaporated
9: Cover and cook for 20 minutes

B)
10: Roughly chop 3 potatoes and add to pan, add a bit of salt and pepper to the potatoes
11: Add ~20 plum/cherry tomatoes directly to pan and give 'em a quick stir
12: Add ~250ml of stock, turn the heat down a bit, cover again and cook for 35-40 mins

C)
13: Behold your tender stew
14: Add peas, if fresh add 20 minutes ago and give 'em a quick stir
15: Garnish with sliced celery leaves and serve with bread
16: Don't forget a little extra EVOO
17: Celebrate life and proclaim, "Why am I cooking so good??"

He's a master. The only one who can smell carrots and say "Oh my God"! That's one of the reasons i love Gennaro. He lives the food elements to the fullest appreciating even the smell and taste of the simplest ingredients.
He's one in the billion. Actuallt he is unique. I love and respect you Gennaro!

I just made this dish. It is the best thing I've ever made! If you take a taste in every part of the cooking just as he does, you might feel the flavor he talks about. I fall in love with every part of the cooking. Quick tip : never cook while ure hungry, this way you lack focus and you're not gonna give the elements enough time to cook. Take it easy, maybe start cooking right away after the breakfast.
