Great! I love the passion he transport into his recipes.

I make my pasta dough usually 50/50 of flour & semolino, 1 complete egg per 100g flour-mixture and a shot of olive oil. If the dough gets too dry, it's usually enough to wet one hand a bit, and work the moisture into the dough.

Kids LOVE making pasta.  It is like magic when they see the dough ball transform into something so familiar like noodles! Great fun - memories. My son gets upset with me if he knows I've been playing with pasta dough without him around. lol    Great tips but it is sooo hard for me to find good "00" flour in the US.  What I managed to find was not good :(   It is easier to grind a soft white wheat berry versus continually searching for good 00 flour.  However,  I double sift it which makes it like powder. I will try the semolina too, maybe the results will be even better.

Bravo Gennaro! How does this dough differ, in terms of taste an texture, from your other pasta dough recipe, which only calls for 2 eggs?

I love it that he shows you don't need to do the volcano shape thing, it doesn't really serve a purpose other than that it looks cool but it's way too much of a hassle.

Hi Genaro, can you make pasta without 00 flour. I can't seem to get it in my local shops.
