For me definitely beef. I love when the meat cooks in the soup. Ive traveled all over Vietnam and every region has a version of phó. Try one time their breakfast phó it has a variety of meats. Danang and Hanoi are food heaven huge variety of the whole country u can find there👍🇳🇱

As a vietnamese i will write for a paragraph: Pho is food come from the north vietnam and if you want good pho come to the south cause it is better and the broth is cooked with beef bone, spices and something other idk. And if you want better flavor just add some chilli and some vegetable, and if you want a expensive pho which is like $36 and it is in landmark 81.

Chicken Pho is only good in Vietnam. The breed of chicken they use here in the state does not give you the same bite as the chicken in Vietnam.

Im Vietnamese, came across this short while eating Bun Bo Hue for lunch. Feel so good.

Thing is, they taste alright. If u want an authentic Pho, come to Vietnam it 100x better than it! Better try the bun bo hue or bun mam. Try this sauce(fish sauce, spicy sauce, hoisin sauce, lil chili if they have, and mix) dip with the beef meat and call it a day - it is authentic pho dipping sauce.
